Swiss cheese fondue
Fondues are simple and quick to prepare - perfect for suppers, buffet parties, barbecues and informal entertaining alike.
What you need
- 1 clove garlic, halved
- 450 ml dry white wine
- 1 tsp lemon juice
- 350 g gruyere cheese, grated
- 350 g emmenthal cheese, grated
- 3 tsp cornflour
- 45 ml kirsch liqueur
- 1/2 tsp dijon mustard
- 1 pinch ground nutmeg
- 1 pinch white pepper
Method
Rub the inside of a fondue pot with the garlic. Leave the garlic in the bottom of the pot. Pour in the wine and lemon juice. Bring to the boil, then reduce the heat to a simmer.
Gradually add the cheese, stirring constantly until all the cheese is added and melted.
Blend the cornflour with the Kirsch and mustard. Stir into the fondue. Cook gently for 3-4 min until the mixture becomes smooth and thick.
Season to taste with the nutmeg and white pepper.
Carefully transfer the fondue pan to the lighted spirit stove and serve immediately.
