Swiss cheese fondue

Fondues are simple and quick to prepare - perfect for suppers, buffet parties, barbecues and informal entertaining alike.

What you need

1 clove garlic, halved
450 ml dry white wine
1 tsp lemon juice
350 g gruyere cheese, grated
350 g emmenthal cheese, grated
3 tsp cornflour
45 ml kirsch liqueur
1/2 tsp dijon mustard
1 pinch ground nutmeg
1 pinch white pepper

Method

  1. Rub the inside of a fondue pot with the garlic. Leave the garlic in the bottom of the pot. Pour in the wine and lemon juice. Bring to the boil, then reduce the heat to a simmer.

  2. Gradually add the cheese, stirring constantly until all the cheese is added and melted.

  3. Blend the cornflour with the Kirsch and mustard. Stir into the fondue. Cook gently for 3-4 min until the mixture becomes smooth and thick.

  4. Season to taste with the nutmeg and white pepper.

  5. Carefully transfer the fondue pan to the lighted spirit stove and serve immediately.
