Crusty French bread pizzas

Really easy to make. Vary the toppings as you like.

What you need

1 small baguette
60 ml tomato puree
1 green pepper, cored de-seeded and cut into slice
8 slices processed cheese, each cut into 2 triangles
1 large tomato, wiped and sliced
1 small red onion, peeled and sliced
100 g pepperoni sausages, sliced
25 g pitted black olives, halved
8 anchovy fillets
1 dash freshly ground black pepper

Method

  1. Preheat grill to medium heat.

  2. Cut the baguette in half lengthways and then in half again. Lightly toast each piece under the grill for 3-5 min.

  3. Spread each baguette length with the tomato puree. Top with alternate layers of pepper, cheese slices, tomato, onion and pepperoni. Sprinkle over the olives and anchovies then a little black pepper.

  4. Place under the grill for 5-8 min or until cheese has melted, pepperoni is cooked and topping is piping hot. Serve immediately.

Cook's tip

If preferred Mozzarella and Cheddar cheese can be used instead of the processed cheese slices in the pizzas. The processed cheese slices just make it into an ideal store cupboard standby.
