Chilli sausage casserole

An easy supper dish that is a real family favourite.

What you need

450 g good quality sausages
6 tsp oil
1 large onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
1 red chilli, de-seeded and finely chopped
1 tsp paprika
400 g canned baked beans
400 g canned cannellini beans, drained
200 g canned red kidney beans, drained
3 firm tomatoes, de-seeded and quartered
seasoning
1/2 tsp chilli powder
6 tsp chopped fresh coriander

Method

  1. Grill sausages under a moderate grill for 10-15 min, turning to allow them to brown evenly.

  2. Heat the oil in a pan. Saute the onion and garlic until soft. Add the chilli and paprika. Cook for 1 min.

  3. Cut sausages into large chunks. Add to the pan with the baked beans, cannellini beans, kidney beans and tomatoes. Season. Stir well. Simmer for 10 min until piping hot.

  4. Just before serving, stir in the chilli powder and coriander.
